Ghee (clarified butter): Trust me, you want this every day instead of veggie oils. It's clean, taste great, and has a really high smoke point. This oven recipe is drawn out but there's little hands on time.

- Place 2 sticks of unsalted butter in a 2 cup Pyrex measuring cup.
- Heat in 250°F oven for 2 hours.
- Skim off the top
- Return to oven for 1 hour
- Remove and let cool slightly, ~15 minutes.
- Strain through cheesecloth into 6 oz regular mouth mason jar.
- Cool in the fridge to set, then store as you would olive oil for daily use.
